Yea, I would never do a brisket by itself in a crock pot. With the chili recipe, I'm okay however. No different than keeping it that stove pot like a normal chili, just slower.
The way I do a real brisket is I season it the night before, cover it and put it in the fridge, than get up early, set it out, and get it up to room temperature. While that is going on I get the smoker up to temp (~ 225 degrees) then smoke it for at least :45 mins to an hour/pound. I'll have a "mop" ready, and use that every hour or so.
That's the plan for the left over brisket I bought for the chili. (It was a 13-pounder.) The weather forecast looks good for that plan too!

Mark, just win that prize. Those chile's are ground right where they're grown, so they should be a bit unique. The only place I've seen more chiles is in Hatch, NM. It's known as the chile capital of the world.
Just hope it does the trick for you.

Almost made a major mistake regarding the contest - I forgot to register!! : Don't worry, I took care of it today! I also found out I had to give my chili a name. How's this? Santa Cruz Brisket Bomber ChiliAdditionally, this is a more serious tradition at the Star Family of Dealerships than I originally imagined. This is the 14th annual chili cook off. They get local celebrities to judge, and have even had the Mayor of Abilene judge in the past! (Wow!) I don't know who the judges are this year. This is a serious event guys, though I doubt it'll get me into the chili cook off circuit! Of course, I'll let you know how it goes tomorrow night.

Well guys, I didn't place. I don't even know if I got any votes. I don't even know how it went. I missed the entire event. In fact, someone else had to bring my entry over to the Dodge store from the Hyundai store for me. I didn't even get a chance to partake in the potato bar. Nothing. Why? I was the only salesman in the dealership selling a car!! Now get this. It wasn't even a Hyundai. It was a new Dodge Journey. We tested two Hyundais - a Tucson, and a Santa Fe - which they didn't really care for, so I asked if they had checked out Dodges. I showed them the Durango (to expensive) so we went to the Journeys. (Not quite as expensive, and a bit better gas mileage.) Long story short; I missed the big chili cook off, the employee luncheon, the speech from the owner, the prizes, etc., etc. So, since I'm not Dodge certified one of the Dodge guys had to do the delivery, and explain the vehicle to the buyers. I was sitting there mostly listening when a previous customer called me. I had shown her a used, 2008 Dodge Avenger on my lot earlier in the day. She was back, and ready to buy!! Woo Hoo!! My first two-car day!!! Actually, we didn't finish the deal tonight, and will take care of it in the morning. Her husband had to drive out from Sweetwater, and by the time we got to finance, the banks were all closed. No big deal. Sorry I didn't place in the chili contest, but to tell the truth I'll take a two-car day over that ANY DAY!! (BTW, I found out later the guy who won has won the contest SIX times in the past ELEVEN cook offs! This was our 14th.) P.S. Son #2 noticed I wore the same red shirt today that I wore when I sold my first car! It was a Christmas present from my wife. He told me to keep wearing it! I just might!

congrats on the multi sale day, that made you more money than the chili anyway. You have to tell us how it tasted, I dont care about the other guys, how did yours come out? What do you think it needs to be the best next year, or at least to place? give us the nitty gritty details, besides, next years contest you'll probably sell 4 or 5 cars. Congrats on being our representative. tell them that if you dont win next year, we'll have to nuke them all. LOL :patriotic-flagwaver :clap :2thumbsup :guns :green-beer

Ron, I was so damn busy today I didn't even get a chance to finish my first mug of coffee, much less taste ANY of the chili entries!
I did get a few minutes to chat with one of my co-workers who gave me an opinion of my chili, however. He told me he loved the spices, and the heat in mine. He also said he felt the winning chili was sort of "bland" to him. When I asked why, he said he preferred a hot chili. Apparently the judges weren't going for hot.
This morning when I brought the pot in I plugged it in to warm it up, and I did have time (once) to stir it. When I did it the scent clearly filled the room. My boss asked me, "How much beer did you put in there Mark?"
"Three bottles of Shiner."
"Dang," he said. "I can smell it." (I couldn't. I too noticed the spice, and the heat just like my co-worker.)
So, I did manage to get one "atta boy" for it.
In all honestly I think I should have seasoned the brisket a bit, and browned it before I added it to the bacon/onion/garlic mixture. Maybe next time.

Jim Too Thanks guys! You know, I started this thread over the fact that I wasn't selling any cars, and thought at least I could combine my love of cooking with the opportunity to make a few bucks! Since then I've sold three cars. Man, what a feeling! I'm learning more everyday, and can't wait to keep this roll going! I definitely made more money on a two-car day than I would have won in this contest! That's not to say I didn't enjoy participating! I still got to take home about half the pot to feed the family, and of course they love it!

Oh, I have to add this little tid-bit on my first sale of the day. After we tested the two Hyundai's, and I went inside to get the keys to the Dodge Journey my customers eventually bought, the General Manager of the dealership saw me walking back through the showroom.
He said, "Hey Mark. If you need to show any more cars, tell your customers we have some dump trucks out back."
Without missing a beat I said, "I will sir!"
Cracked me up!
(That guy knows everything going on around there!!)

Mark, you had the cojones to stand up and make a pot of chilly against all the locals. You need that kind of confidence to sell cars. I was a sales guy for over 40 years, if you dont have brass ones, you wont have any at all. You enlisted, you served, you retired. You just have to keep polishing the brass.
Next year, make two chili's, one hot the other milder with more punch out meat flavor. I'll share an old recipe with you one of these days, but I think I lost all the proportions, so you'll have to play with it.

Well guys, this is how you make lemonade out of lemons.
The second car deal of yesterday with the young couple from Sweetwater fell through this morning. Turned out we could not get them financed.
So I called another customer on my list who had looked at the same car on Wednesday. She didn't even return my call. She just showed up! I met her in the parking lot, and she said, "Let's go run the numbers."
WINNER!!
I sold the car anyway!
I suppose technically it's not a real two-fer anymore, but it was still a good day!
Oh, our receptionist asked me which chili was mine yesterday. I told her it was the one with the brisket. She said she appreciated mine because I used large pieces of meat unlike several of the others which she described as "crumbled beef with chili sauce." I'll take that compliment!

what if you were to throw some background flavor into the sauce, maybe something like some Italian sweet or hot sausage (so long as it doesnt conflict with the chile powder), maybe a piece of veal, maybe even some rattlesnake. Just put that into the sauce and let it cook down to nothing (over a day or so) before you put the brisket in? Maybe adding that OTHER DIMENSION will add a bit of stiffening to the sauce, and give another layer of flavor, as Emeril likes to say.
Hey, you've got a year to play with it. Start with the cheapest part, the sauce, and go from there??
